A Cocktail List Between Two Shores

Our cocktail list is a little Irish, a little Australian, just like The Fifth Province.

Some drinks lean into our Irish side. Others carry the sharpness and intensity of Aussie natives. Most sit somewhere in the middle, bridging two drinking cultures built on bold flavour, thoughtful hospitality and a considered pour.

There’s the Irish Cleanser, with Poitín, Ireland’s oldest spirit, infused with muntrie berries, green apple, mint and lime. Tart, lightly spiced and a little unruly.

The Barry’s Highball brings Barry’s Tea cold-infused into gin, brightened with lemon aspen syrup and lifted with soda.

Then there’s our Frozen Irish Coffee. A heady mix of Jameson, Shanky’s Whip, Mr. Black, cold brew, brown sugar and macadamia cream. A classic, made a little more suited to this part of the world.
